Peaches and Cream Cobbler

 

Grocery List or things you need to have on hand:  1 pkg cream cheese OR vanilla instant pudding mix, self-rising flour, 1 egg, milk, butter or margarine

List of Ingredients

2 pkg. cream cheese or vanilla instant pudding mix (small box – can use sugar free if you’re counting points or calories)
¾ cup self-rising flour
1 egg
½ cup milk
3 Tbsp. melted butter or margarine
1 medium can of “Lite” peaches
½ cup sugar or Splenda
cinnamon and sugar for top

Directions: 

Mix together 1 pkg cream cheese or vanilla pudding mix, flour, egg, milk and melted butter or margarine. Spread in lightly greased small casserole dish (8x8 square or 8x5 oblong) working dough up the sides about a ½ - 1 inch. You can double this recipe and use a larger pan. Drain 1 medium can of “Lite” peaches (hold juice for cream cheese filling). Place peaches across top of crust. Cream together 1 pkg (8oz) cream cheese, ½ cup sugar or Splenda, 3 Tbsp. Peach juice.  Lightly spread over peaches (be sure to keep an inch margin from the side of the dish to allow crust to rise as it bakes): Sprinkle top with cinnamon and sugar.  Bake in preheated 350o  oven for 39-43 minutes. Serve warm or cold (if it lasts that long!!)

Hints, Tips and Variations:

You can use "lite" cream cheese, but not the fat free as the consistency is not the same.

This one is very good with the low sugar variation or the full sugar recipe. Depends on who you're serving or what your mood.
